Savory Garlic Shrimp With Roasted Peppers
  1. Thinly slice the cloves from 1 head of garlic (skins removed), thinly slice the roasted red bell peppers and pat the shrimp dry with paper towels, season with sea salt & black pepper

  2. Heat a large fry pan with a medium heat and add in a generous 2 tbsp extra virgin olive oil

  3. After 1 minute add in the sliced garlic, mix with the olive oil, after 30 seconds and the garlic is fragrant, add in the shrimp, all in a single layer, cook for 1 minute per side, then remove the shrimp from the pan and set aside

  4. Immediately add in the sliced roasted red bell peppers and 1 tsp sweet smoked Spanish paprika into the pan with the garlic, quickly mix together, then add in ½ cup white wine and season with sea salt & black pepper, mix and then simmer for 2 minutes, then add the shrimp back into the pan and 2 tbsp finely chopped parsley, mix together and remove the pan from the heat

  5. Sprinkle with more finely chopped parsley and serve at once, next to a crunchy baguette, enjoy!
