In a large bowl mix together dry ingredients. Store in an airtight container up to 6 months.
To prepare: Preheat oven to 400°. To prepare combine 2 cups mix, ½ cup shortening OR oil of your choice, ¾ cup milk, 2 eggs, 1 tsp vanilla and 1 cup add-ins (such as fruit, chocolate chips or nuts). Fill paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 18-21 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
For Blueberry Muffins: Fold 1 cup fresh or frozen blueberries into prepared batter.
For Banana Muffins: Fold 1 cup mashed ripe bananas to egg mixture.
