In a hot pan with oil, sauté onions and mushrooms for a couple minutes until onions are more translucent.
In a small bowl, mix together the broth, soy sauce, mirin, sugar, and sake. Pour into the pan.
Add the beef to the pan and cover until beef is 90% cooked. If using frozen beef, you may need to let it simmer longer. If fresh, meat should cook quicker.
Add the eggs and cover. Let it simmer until the top of the egg is cooked like a soft boiled egg. Taste and adjust the sauce.
Serve over a hot bed of rice and sprinkle with furikake. Enjoy!!
