Fruit Cake With Creamy Twist
  1. Preheat the oven to 160C.

  2. Prepare a cake tin by greasing it with butter and lining it with parchment paper.

  3. Combine flour, sugar, baking powder, mixed spice, honey, and bicarbonate of soda in a mixing bowl.

  4. Rub in the butter to form breadcrumbs, then stir in the mixed fruit and milk.

  5. Transfer the mixture to the loaf tin and bake for 1 hour and 45 minutes at 160C.

  6. Cool the cake in the tin before serving with a spread of Primula light cheese.
