Combine all the ingredients for the dough and knead until smooth (not too stiff, not too soft, just like simit dough).
Divide the dough into 9 pieces, cover with plastic wrap and let rest for 5 minutes.
Roll out each piece into a small round shape, place some grated cheese in the middle, then fold and shape into a simit.
Dip the shaped simit pizzas into the molasses-water mixture, then coat with sesame seeds.
Use a sharp knife to cut slits in the middle of each simit pizza.
Let the shaped simit pizzas rise for 25 minutes.
Press the middle parts down again.
Bake in a preheated 190°C oven for 15 minutes, then take out and add more cheese and sausage (if using), then bake until the cheese and sausage are melted and cooked.
