Simit Pizza
  1. Combine all the ingredients for the dough and knead until smooth (not too stiff, not too soft, just like simit dough).

  2. Divide the dough into 9 pieces, cover with plastic wrap and let rest for 5 minutes.

  3. Roll out each piece into a small round shape, place some grated cheese in the middle, then fold and shape into a simit.

  4. Dip the shaped simit pizzas into the molasses-water mixture, then coat with sesame seeds.

  5. Use a sharp knife to cut slits in the middle of each simit pizza.

  6. Let the shaped simit pizzas rise for 25 minutes.

  7. Press the middle parts down again.

  8. Bake in a preheated 190°C oven for 15 minutes, then take out and add more cheese and sausage (if using), then bake until the cheese and sausage are melted and cooked.
