Blend the cottage cheese using an immersion blender until smooth.
Then add in the milk, maple syrup, and vanilla and mix until combined. You can also add all ingredients into a blender and blend that way.
Mix in flour, baking powder, and salt to form a soft dough. If your dough is too wet, add in 1 tbsp more of flour until you have a workable dough that isn't sticky.
On a lightly floured surface, roll dough into a small rectangle (about 4x6 inches).
Brush with melted butter, then sprinkle with coconut sugar and cinnamon.
Use a pizza cutter to cut out 5-6 equal strips. Then roll each one into a tight log and place in an air fryer safe dish that is greased with butter or oil.
Bake in the air fryer at 330 for 6-8 minutes, or until lightly golden and cooked through. You can also bake in the oven at 350F for 10-15 minutes.
While it bakes, mix powdered sugar, milk, and vanilla until smooth. If your icing is too watery add a little more powdered sugar until you reach the right consistency.
Let the roll cool slightly, then top with icing and dig in!
