Mix the sauce ingredients together and set aside.
Add 1 tsp soy sauce, minced garlic & ginger to the diced chicken then coat in cornflour.
Spray with low calorie spray and air fry on 190C for 14 mins turning half way and spraying with more low calorie spray.
Remove the crisp tray then pour the sauce over the chicken and air fry on 200C for 2-3 minutes.
In a large bowl mix the microwave rice with the grated carrot and peas, then pour over the dark soy and sweet chilli sauce.
Mix well then air fry on 200C for 5 mins, give it a good stir half way.
Plate up with the sliced spring onion and enjoy!
