Combine the Wet Ingredients in a microwave-safe mug or ramekin: Add the cottage cheese, egg, vanilla extract, and maple syrup. Whisk until fully combined.
Add Dry Ingredients: Stir in cocoa powder, almond flour (or regular flour), and a pinch of salt. Mix until you get a smooth, thick batter with no dry pockets.
Add Toppings: Sprinkle chocolate chips or nuts on top. Optionally, swirl in a small spoonful of cream cheese or peanut butter.
Microwave on high for 60–90 seconds. The brownie should puff slightly and be firm around the edges but slightly gooey in the center. Cool for 1–2 minutes before serving.
