Gluten-free Granola Bar Recipe
  1. In a large bowl (or stand mixer) combine the brown sugar and eggs. Beat together until smooth and then add the mashed bananas and peanut butter. Stir until combined and then add the salt and old-fashioned oats. Mix until all of the dry ingredients are moistened and then fold in the chocolate chips and butterscotch chips.

  2. Spread the batter evenly into a 15-by-10-inch baking pan coated with cooking spray. Then bake for 20 to 25 minutes in a 350°F oven. Remove when the bars begin to bubble and the edges turn brown.

  3. Let the bars cool for 10 to 15 minutes in the pan and then carefully remove and transfer to a wire rack to finish cooling. Slice into bars.
