Smoky Sweet Potato, Lentil & Baked Feta Power Hash
  1. Dice sweet potatoes and slice red onion and red pepper

  2. Toss sweet potatoes, red onion, and red pepper with olive oil, smoked paprika, cumin, garlic granules, salt and black pepper

  3. Roast for 20 minutes

  4. Add drained green lentils and crumbled feta to the tray

  5. Roast for another 10 minutes

  6. Create 4 wells in the mixture and crack a medium egg into each

  7. Bake until eggs are cooked to your preference

  8. Garnish with fresh parsley or coriander and optional chilli flakes
