Combine all ingredients into the bowl of a food processor. Pulse until well combined, scraping down sides as needed. Refrigerate mixture for an hour or up to overnight.
Remove from the fridge and form into even rounds. I used roughly 2 tbsp per falafel. Spray with air fryer safe oil and cook for 10 minutes at 400 degrees fahrenheit. Flip falafel over and cook for an additional 3-5 minutes until golden.
Serve immediately
For pitas: Combine 375 grams all purpose flour, 300 grams greek yogourt, 1 tsp sea salt, 4 tsp baking powder, 1 tbsp olive oil (optional but helps keep dough together) together. Using a spoon, mix well, then use your hands to knead the dough together until it's no longer crumbling.(It won't be a smooth dough like a pizza dough) Divide dough into 4 or 6 equal portions and cook on an oiled cast iron skillet till golden, 3-4 minutes on low heat per side.
