Slow Cooker Lazy Enchiladas
  1. Add your onion, chicken, black beans, passata, carrots, fajita seasoning, and garlic to a slow cooker pot. Season with salt, pepper and paprika. Mix until thoroughly combined.

  2. Cook on high for 4 hours or low for 6-8 hours.

  3. Remove the lid and mix. Then add in your peppers, sweetcorn and sliced tortilla wraps. Stir well and top with 100g grated mozzarella.

  4. Pop the lid back on and cook on high for 10 mins.

  5. Serve and enjoy!
