Preheat oven to 200°C
In medium baking dish, combine tomatoes, shallots, garlic, red pepper flakes, and ½ tsp salt. Toss to coat/mix
Place feta in centre of veg, drizzle with remaining oil
Scatter thyme, crack pepper, and bake for 45 mins until tomatoes are bursting
Cook pasta according to package, reserving ½ cup pasta water
Remove dish from oven, add lemon zest & juice and mix until feta is combined with pasta water to make a creamy sauce
Add pasta, mix well and serve with fresh basil to garnish
