Thinly slice 5-6 cucumber coins and gently press them into the side of a lowball cocktail glass. The moisture in the cucumber should help them stick. (If the glass is too curved, it may not work.)
In a cocktail shaker, muddle 6 thicker slices of cucumber and 10-12 mint leaves.
Add 2oz gin and 2oz lime juice to shaker.
Strain into your cucumber-lined glass that’s been filled with ice.
Top with club soda. Gently whack another bunch of fresh mint on your counter to release the aromas, then use as garnish. Enjoy!
