2 cups milk
2 cups water
⅓ cup butter
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon pepper
1 cup grits
2 cups grated Swiss cheese (about ½ lb.)
1 cup chopped green onions (about 5 medium)
Preheat the oven to 350 degrees. Butter a 1 ½ quart baking dish.
In a large saucepan, bring the milk, water, butter, garlic, salt and pepper to a boil. Gradually stir in the grits. Reduce the heat to medium-low and simmer uncovered, stirring frequently until thick, about 5 minutes. Stir in the cheese and green onions and remove from the heat.
Place the eggs in a bowl. Stir about 1 cup of the hot grits into the eggs and stir the warmed eggs into the remaining grits in the saucepan.
Pour the grits into the prepared baking dish and spread evenly. Bake until the grits are set and golden brown on top, 35 - 40 minutes. Let stand for 10 minutes before serving.
