Carne Guisada
  1. Cut your chuck into smaller pieces & heavily salt it everywhere.

  2. Sear it off in some oil over medium heat. Make sure to note crowd your pan. Remove and set aside.

  3. In that same pan add in your tomatoes, onions, and garlic. Once they’re soft & slightly charred add your peppers in.

  4. When everything is nice and toasted add in your bone broth & beer. Bring to a simmer & let cook covered over medium low heat for 10 mins till everything is soft.

  5. Blend veggies with chicken bouillon, 1 tsp salt, oregano, bay leaves, and peppercorn until smooth.

  6. Add a little oil to first skillet over med low heat. Once hot add in your sauce, add about ¾ c water to your blender and pour that in as well.

  7. Adjust salt to taste & add your meat in. Bring to simmer, reduce heat to medium low, cover, and cook for about 2 hrs.

  8. Once time is up your meat should have about 20 mins let, add your potatoes, nopales, cover, and cook until everything is nice & soft.

  9. Serve with rice, beans, onions, cilantro, cotija cheese, and enjoy babe!
