Activate the Yeast: Start by warming 1½ cups of water to 100–110°F. Pour the warm water into a large mixing bowl and stir in ½ teaspoon of granulated sugar. Then sprinkle 2 teaspoons of active dry yeast over the top. Let it sit for 5–10 minutes, or until it looks bubbly and foamy.
Make the Dough: Once the yeast is activated, add in 3 cups of all-purpose flour, 2 tablespoons of extra virgin olive oil, and 1 teaspoon of salt. Stir everything together until it starts to come together. Knead the dough by hand for about 5 minutes until it’s smooth and slightly elastic.
First Rise: Form the dough into a ball and place it back in the bowl. Drizzle a little olive oil over it and turn it to coat. Cover the bowl and let it rise in a warm spot for about 1 hour, or until doubled in size.
Shape the Dough: Preheat your oven to 450°F. Lightly grease a large baking sheet with olive oil. Turn the dough out onto the baking sheet and stretch and press it into a 12×18-inch rectangle.
Make the Garlic Butter: In a small bowl, melt 2 tablespoons of unsalted butter. Stir in 1 tablespoon of minced garlic and 1 teaspoon of Italian seasoning. Spread this garlic butter mixture evenly over the surface of the dough.
Add the Cheese Toppings: Top the buttered dough with 1 cup of fresh mozzarella pearls, ½ cup of shredded mozzarella, and ½ cup of grated parmesan. Sprinkle a little extra Italian seasoning over the top.
Bake: Transfer the pan to your preheated oven and bake at 450°F for 15 minutes, or until the cheese is melted and bubbling and the edges of the dough are golden brown.
Cool Slightly & Slice: Let the breadsticks cool for 5 minutes before slicing. Then cut into strips or squares.
