Heat a wide sauté pan over medium high heat. Add 2 Tbsp of neutral oil until hot. Pour in the quinoa, making sure it stays in a single layer. Shaking the pot regularly, let the quinoa pop for 1-2 minutes. Transfer to a sheet pan and season with salt and pepper. Allow to cool.
In a large bowl, add all the ingredients and toss to coat thoroughly. Top with the puffed quinoa. Serve and enjoy!
