Sauté onion and mushrooms in olive oil until golden and caramelized
Cook broccoli according to package directions — don't overcook
Cook quinoa according to package directions and season with salt
Add all components into a large bowl. Add eggs, cottage cheese, shredded cheese, salt and pepper and mix well to combine
Spread into a greased baking tin and top generously with more shredded cheese
Bake at 350°F for 45 minutes to an hour until golden
