Quinoa Casserole
  1. Sauté onion and mushrooms in olive oil until golden and caramelized

  2. Cook broccoli according to package directions — don't overcook

  3. Cook quinoa according to package directions and season with salt

  4. Add all components into a large bowl. Add eggs, cottage cheese, shredded cheese, salt and pepper and mix well to combine

  5. Spread into a greased baking tin and top generously with more shredded cheese

  6. Bake at 350°F for 45 minutes to an hour until golden
