Bake, flipping halfway through, until lightly browned on both sides, 10-12 minutes.
Store at room temperature in an airtight container or zip-top bag for up to two days.
To assemble, transfer the crostini to a serving platter and arrange in a single layer.
Top each crostini with a pear slice, a piece of burrata, and a drizzle of the vinegar and honey.
Sprinkle with thyme, salt, and pepper. Serve.
