In a small bowl, mix all the spices and maple syrup into a paste. This helps it distribute evenly.
In a large bowl, add the spice-maple mix to the ground pork. Mix thoroughly, but don’t overwork it (your hands or a stand mixer on low works best).
Cover and refrigerate for or overnight. This lets flavors develop.
Fry a small piece in a pan. Adjust salt, sweetness, or spice if needed.
Shape into patties and cook, or store raw in the fridge (2 days) or freezer (up to 3 months).
