Simmer cranberries, orange peel, and ginger for 15 minutes in a covered pot
Add cinnamon and star anise, simmer 5 more minutes
Remove from heat and stir in maple syrup
Let cool 10 minutes, then add bitters
Strain through a mesh strainer, pressing solids to extract liquid
Refrigerate in an airtight bottle for up to 1 day
Fill a glass with ice
Add 2 oz concentrate
Top with 5–6 oz ginger kombucha or ginger sparkling probiotic
Garnish with a few cranberries and a thin slice of orange
