Preheat oil in cast iron skillet for 2 minutes over medium heat and add potatoes. Season with salt and pepper. Reduce heat to medium low and cover. Cook for 7 to 8 minutes, stirring occasionally, until potatoes are tender. Remove potatoes from skillet and set aside until needed.; Add Chorizo to skillet and cook for 5 minutes over medium low heat, crumbling with a spoon while cooking. Mix in onion and garlic. Cook for 1 minute, gently fold in potatoes, and continue to cook for 1 to 2 minutes. Serve with warm tortillas and enjoy!
