To Serve (optional):
Preheat your oven to 425°F/220°C.
In a big bowl add all ingredients for the kebabs. Mix by hand.
Line a sheet pan with parchment paper. Transfer mince mixture to the tray. Press mince into a rectangle ~½" thick. With a spatula "slice" the rectangle into 6-9 thin rectangles parallel to the short sides of the rectangle. Then "slice" those in half parallel to the long sides of the rectangle. Bake for 15 minutes. When the kebabs come out of the oven, drizzle with a little olive oil.
In a small bowl, mix all ingredients for the quick yogurt sauce.
In a medium bowl mix the flour, baking powder, salt, and yogurt. When the dough looks shaggy, add 2 Tbsp water and mix again.
Flour your surface and your dough and knead the dough, sprinkling with more flour if it becomes sticky.
When the dough forms a smooth ball, cut the ball into six pieces. Roll each piece into a ball. With a rolling pin, flatten each ball.
Heat your skillet, preferably cast iron, over medium high and drizzle with a little olive oil. Cook each pita for 1-2 minutes per side.
To serve, top each pita with kebab pieces, chopped cucumber and tomato, and sliced purple onion, and drizzle with yogurt sauce.
