Classic German Jägerschnitzel (west German Style)
  1. Pound the pork cutlets thin. Season with salt and pepper.

  2. Bread the cutlets: flour → egg → breadcrumbs.

  3. Fry in hot oil or clarified butter until golden on both sides. Keep warm.

  4. For the sauce, sauté onions in butter, add mushrooms and brown well.

  5. Stir in flour, add broth, then cream. Simmer until silky. Season to taste.

  6. Cook potatoes until tender, slice, then pan-fry with onions until crispy.

  7. Serve schnitzel with mushroom sauce on the side and potatoes alongside.
