Roll sausage into tiny meatballs. Sear/cook, let it produce grease. Once cooked, set aside meatballs.
Throw in your diced onion, cook til almost soft, add in leeks. Cook down a bit.
Add in carrots and celery. Cook down, throw in garlic.
Pop in your seasonings and broth. Bring to a boil and allow to simmer for 20 minutes. Throw in the meatballs in the last 5-10 minutes.
Meanwhile, cook the pasta.
Serve bowls, soup, a little bit of pasta, topped with spianch/kale, juice, parm, and herbs.
