Peel, core and dice 3 small green apples.
Add 4 tablespoons of brown sugar, 1 teaspoon of ground cinnamon and 1 teaspoon of ground nutmeg. Stir to combine.
Cook the apple mixture for about 10 minutes, stirring occasionally, until the apples have softened.
Allow the apple mixture to cool for about 30 minutes.
Cut the thawed puff pastry sheets into 4 long strips each.
Wet the edges of one pastry strip, place a small amount of the apple mixture on one half, fold the pastry over and press the edges together with a fork.
Repeat with the remaining pastry strips and apple mixture to make 8 apple pies.
Chill the apple pies in the fridge for 15 minutes.
Heat vegetable oil in a wok or deep fryer to a high temperature.
Fry the apple pies a few at a time for 2-3 minutes until golden and crisp.
Drain the fried apple pies on paper towels.
