Roasted Garlic Dip
  1. Preheat the oven to 400.

  2. Cut off the tops of the garlic cloves so that every clove is visible.

  3. Transfer the cloves to a large piece of aluminum foil, and drizzle some olive oil over each head of garlic, plus some sea salt.

  4. Fold up the aluminum foil to fully enclose the garlic, and bake it for 1 hour.

  5. In the meantime, add a splash of olive oil to a pan, plus the chopped shallot, and let it slowly caramelize on low heat for about 30 minutes; the shallots should be a nice golden brown.

  6. When the garlic is almost done, grab a large bowl, and add the cream cheese, sour cream, shredded cheese, and diced shallot. Season with salt and pepper.

  7. Remove the garlic from the oven, and lower the heat to 350.

  8. Let the garlic cool for 10 minutes, then squeeze the garlic cloves into the bowl with the cream cheese mixture.

  9. Fold in all of the roasted garlic, then transfer the dip to a baking dish.

  10. Top it with a little more shredded cheese, then bake for 20 minutes.

  11. To get the top of the dip to be golden brown, broil it for 3 minutes once it’s done baking.
