My Favorite Roast Chicken
  1. Tear up some really good sourdough bread, toss it with some leeks and shallots. Season really well with Olive oil, sea salt and black pepper.

  2. Place the well seasoned chicken on top and roast it all together.

  3. Serve with a bitter green salad with lots of fresh herbs and a mustard/ champagne vinaigrette.
