For the Umami Filling
For the Pastry & Finish
Chop & Sauté: Finely mince the mushrooms and artichokes.
In a small skillet over medium heat, sauté the minced mushrooms and artichokes until the mushrooms have released their liquid and it has completely evaporated. This concentrates the flavor and prevents a watery filling. Remove from heat and let cool slightly.
Mix Filling: In a medium bowl, combine the softened cream cheese, mayonnaise, miso paste, minced garlic, tamari, nutritional yeast, smoked paprika, and black pepper. Mix until smooth.
Fold in the cooled mushroom and artichoke mixture. Taste and adjust seasoning if needed.
Assemble the Bites
Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a standard 12-cup muffin tin, or line a large baking sheet with parchment paper.
Cut Pastry: Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the sheet into 12 to 16 equal squares (for a muffin tin/cup shape).
