In a food processor, blend all the patty ingredients (except panko) until combined but still holding some texture.
Portion the mixture into 3-4 balls. Coat thoroughly in panko breadcrumbs until they hold their shape, then gently press into patties.
Place patties in a lightly oiled airfryer basket. Spray the tops with a little oil and cook at 375°F for 12 minutes until golden and crisp.
While the patties cook, mix together the diced cucumber, lemon zest and juice, dill, parsley, garlic salt, and coconut yogurt in a small bowl.
Toast your burger buns, then layer with a generous scoop of sauce, a lentil patty, fresh tomatoes, pickled cucumber, and pickled red onion.
