Cheesy Chicken Broccoli Rice Casserole
  1. Preheat oven to 350°F and grease a 9x13 baking dish.

  2. Add uncooked rice, chicken broth, milk, cream soup, garlic powder, onion powder, paprika, salt, and pepper to the baking dish. Whisk until combined.

  3. Stir in broccoli and chicken until evenly distributed.

  4. Cover tightly with foil and bake 45–50 minutes, until rice is tender.

  5. Remove foil, stir everything, and top with cheddar and mozzarella.

  6. Add butter on top (optional) or sprinkle cracker crumbs if you like a crunchy topping.

  7. Bake uncovered another 10–12 minutes, until cheese is melted and bubbly.

  8. Garnish with parsley and serve warm.
