Mexican Shell Soup (sopa De Conchitas) - Vegan
  1. Put a large stockpot over medium-high heat

  2. Add vegetable oil and pasta

  3. Stir constantly until the pasta is lighter and color and toasty in places, about five minutes

  4. Add the broth, tomatoes, sauce, and dehydrated onion

  5. Cover and let boil for 15 minutes or until the pasta is tender

  6. Salt and pepper to taste

  7. Remove from heat and serve

  8. Add a spoon each of cilantro, onion, and mayo

  9. Stir well until the soup is very creamy
