Chocolate Chia Cake
  1. Preheat oven to 350°F (175°C). Line a 7–8 inch (18–20 cm) round or square pan with parchment paper.

  2. In a heatproof bowl, melt chocolate and butter together (microwave or double boiler). Stir until smooth.

  3. In a separate bowl, whisk eggs, maple syrup, vanilla, and Greek yogurt. Stir in the chia seeds and let sit for 10 minutes to thicken slightly.

  4. Add melted chocolate mixture to the egg mixture, then whisk in cocoa powder, baking powder, and salt until smooth.

  5. Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

  6. Let cool completely before slicing. Top as desired and enjoy!
