Preheat oven to 200°C (fan-forced).
Boil the potatoes until soft, then drain.
Mash the boiled potatoes and press them into an oven-safe dish to form a base.
Lightly Spray the mashed potato base with olive oil.
Bake in the oven for 10–15 minutes until lightly crispy.
In a mixing bowl, combine: Cooked chicken, Chopped bacon, Eggs, Cream cheese, Chopped spring onions.
Remove the potato base from the oven and spoon the mixture on top.
Top with grated cheese.
Return to oven and fan bake for 20–25 minutes until golden and set.
