Preheat oven to 230 deg F (convection recommended)
Season tomatoes with salt and pepper and olive oil
Align tomatoes seed side up! (the middle of the tomato - they will dehydrate faster this way)
Roast for 3 hours
Idea! Purée these with double cream, add cooked crab leg for a cream of tomato and crab soup. Servie with local baguette.
