Chop potatoes into half inch chunks. Chop onions similarly.
Put veggies including garlic in the pan.
Add salt, pepper and olive oil to taste.
Cook the veggies for one hour covered at 375°F.
Set aside 5tbsp of the chicken seasoning.
Cut chicken thighs into 1-inch strips, placing them into a hand mixer bowl.
Add the seasoning as a dry rub into the bowl, mix.
Once the veggies are done, add in the 5tbsp section and mix the veggies.
Spread all the chicken thighs over top of the veggies. Do not mix at first.
Cook uncovered at 425°F for one hour, stirring every 20 minutes.
Check that potatoes and chicken are fully cooked before serving.
