Pumpkin Cheesecake
  1. Hand blend cottage cheese, add eggs, pumpkin, spices, maple syrup and tapioca flour.

  2. Pour into prepared spring release cake pan

  3. For optional high protein crust: Mix together ⅓ cup melted coconut oil, 1 cup ground nuts, 1 cup almond flour, and 3 tbsp maple syrup

  4. Bake 350 x 55-60 minutes (with or without crust)

  5. For optional cream cheese icing: Mix together ½ cup softened cream cheese and 2 tbsp coconut oil

If no frosting, dust with powdered sugar or top with whipped cream.
