Hand blend cottage cheese, add eggs, pumpkin, spices, maple syrup and tapioca flour.
Pour into prepared spring release cake pan
For optional high protein crust: Mix together ⅓ cup melted coconut oil, 1 cup ground nuts, 1 cup almond flour, and 3 tbsp maple syrup
Bake 350 x 55-60 minutes (with or without crust)
For optional cream cheese icing: Mix together ½ cup softened cream cheese and 2 tbsp coconut oil
If no frosting, dust with powdered sugar or top with whipped cream.
