Peel, wash, and pat dry shrimp. Continue by stirring in Cajun seasoning and rub into shrimp and set in refrigerator to marinate for at least 30 to 45 minutes
In a pot, or IMO the easiest method a pressure cooker heat the oil and sauté the rice until it barely starts to stick. Then hen add your chicken stock, and turn off the heat source. Add all seasonings and sauces remaining, and stir to combine. Start rice cycle in pressure cooker or return rice to heat to finish cooking.
While the rice is cooking, sauté all vegetables to your liking and set aside until the rice is ready. Once the rice is completely cooked either quick release your pressure cooker and turn it off, or remove the pot from the heat. Stir in the vegetables, and set aside.
Cook the sausage in the method you prefer, slice and set aside. Heat pan to medium heat, and melt butter. Once hot add in the shrimp, the shrimp should begin to curl and turn pink. Once shrimp is pink on both sides cook for an additional 30 seconds to ensure safe eating, but avoid over cooking.
Plate rice and vegetable mixture and serve shrimp and sausage over top and Enjoy!
