Keto Zucchini Lasagna Skillet
  1. Heat up a large skillet to medium-high heat. Add in the olive oil and onion. Cook for 3-5 minutes until translucent.

  2. Add in garlic, cook for 30 seconds, and add ground beef with ground Italian sausage.. Cook and crumble the meat until it’s fully cooked. It will take around 7-8 minutes. Season with salt and black pepper.

  3. Now, reduce the heat and add in the zucchini, chopped tomatoes, dried oregano, and red pepper flakes. Mix thoroughly and let it simmer for 8 minutes, until zucchini is tender.

  4. Stir in the ricotta, 4 oz of mozzarella, and all of the parmesan cheese.

  5. Once all the ingredients are mixed, sprinkle with the remaining mozzarella cheese and cover with a lid. Let it simmer for 2-3 minutes until mozzarella melts.

  6. Serve warm!
