  1. Slice Roma tomatoes in half

  2. Prepare a whole bulb of garlic

  3. Generously season tomatoes and garlic with salt and pepper

  4. Drizzle with olive oil and a little maple syrup

  5. Roast in the oven until reduced and flavors concentrate

  6. Add roasted garlic, tomatoes, and squash to a pot

  7. Add a big pinch of ginger and a little cinnamon

  8. Pour in a good amount of chicken stock

  9. Simmer until desired consistency is reached

  10. Stir in a dollop of heavy cream

  11. Taste and adjust seasoning with sea salt as needed

  12. Finish with toasted almonds and a drizzle of olive oil

  13. Serve immediately
