Slice Roma tomatoes in half
Prepare a whole bulb of garlic
Generously season tomatoes and garlic with salt and pepper
Drizzle with olive oil and a little maple syrup
Roast in the oven until reduced and flavors concentrate
Add roasted garlic, tomatoes, and squash to a pot
Add a big pinch of ginger and a little cinnamon
Pour in a good amount of chicken stock
Simmer until desired consistency is reached
Stir in a dollop of heavy cream
Taste and adjust seasoning with sea salt as needed
Finish with toasted almonds and a drizzle of olive oil
Serve immediately
