Beet & Carrot Gut Reset Salad
  1. Grate beetroot, carrot, and apple. (Use gloves for beet — it stains!)

  2. In a small bowl, whisk together olive oil, lemon juice, ACV, honey, salt, and pepper.

  3. In a large bowl, toss the grated veggies with the dressing until evenly coated.

  4. Sprinkle parsley and sesame seeds/walnuts before serving.

  5. Serve fresh & chilled.
