Grate beetroot, carrot, and apple. (Use gloves for beet — it stains!)
In a small bowl, whisk together olive oil, lemon juice, ACV, honey, salt, and pepper.
In a large bowl, toss the grated veggies with the dressing until evenly coated.
Sprinkle parsley and sesame seeds/walnuts before serving.
Serve fresh & chilled.
