INGREDIENTS:
• 1 lb short pasta of your choice
• 2 tbsp olive oil
• 1 lb ground Italian sausage
• 1 yellow/white onion, diced
• 5 garlic cloves, minced
• 1 cup mushrooms, diced
• 1-6 oz can tomato paste
• 2 cups heavy cream
• 2-3 ladles of pasta water (water pasta cooked in)
• Handful of spinach
• 2 tbsp butter
• 4 basil leaves, chopped
• 1 cup parmigiano cheese, shredded
• 1 tsp salt + more to taste
Boil pasta water. Once boiling, add salt.
In a large, deep pan, heat olive oil on medium heat. Add Italian sausage and cook until mostly browned (about 5 minutes). Add onions, garlic and mushrooms and cook for 2-3 minutes. Add tomato paste and cook for 2 minutes. Add heavy cream and reduce heat to low, stirring occasionally, while pasta cooks.
Cook pasta until al dente (about 1 minute less than what the package suggests). Before straining, add 2-3 ladles of pasta water to sauce. Add spinach and mix.
Add drained pasta, butter, basil, and cheese, and stir to combine. Taste for salt and enjoy!
