Preheat oven to 400°F (205°C).
Add carrots to a baking dish along with all ingredients then toss to coat.
Scatter butter cubes over the carrots.
Cover tightly with foil and bake for 20-25 minutes, until tender.
Uncover, toss, and return to the oven for 10–15 minutes, until glossy and lightly caramelized.
Plate then pour remaining juices overtop.
