Garlic Butter Steak Bites
  1. Trim the steak and cut into 1-inch cubes. Pat dry with paper towels (this helps create a better sear).

  2. In a large bowl, toss the steak cubes with sea salt, black pepper, red pepper flakes, garlic powder, and paprika until evenly coated.

  3. Heat a generous splash of avocado oil in a cast iron skillet over medium-high heat until hot but not smoking.

  4. Add the steak cubes in a single layer (work in batches if needed to avoid overcrowding). Sear, tossing occasionally, until browned on all sides and cooked to your preferred doneness, about 6–8 minutes total.

  5. Remove the steak bites from the skillet and set aside.

  6. Reduce heat to low. Carefully wipe the skillet lightly with a paper towel, leaving behind the flavorful browned bits.

  7. Add the butter and let it melt. Stir in the minced garlic, shallot, salt, pepper, and dried parsley. Cook for 1–2 minutes, stirring frequently, until fragrant. Be careful not to brown the garlic.

  8. Remove the skillet from heat. Return the steak bites to the pan and toss thoroughly to coat in the garlic butter sauce.

  9. Garnish with fresh parsley if desired. Serve immediately with roasted potatoes, mashed potatoes, rice, roasted vegetables, or a crisp green salad.
