Orecchiette With Caramelized Tomatoes, Fried Eggplant, Burrata, And Salsiccia
  1. Prepare the Orecchiette pasta according to package instructions.

  2. Fry the Salsiccia or Italian Sausage until browned.

  3. Slice the Cherry Tomatoes and caramelize them in a pan with a bit of sugar.

  4. Slice the Eggplant and fry it in olive oil until golden brown.

  5. Assemble the dish by placing the cooked Orecchiette in a serving bowl, and topping it with the caramelized Tomatoes, fried Eggplant, crumbled Burrata, and grated Parmesan.

  6. Add a few ladles of the pasta cooking water to create a creamy sauce.

  7. Season with salt to taste.
