Prepare the Orecchiette pasta according to package instructions.
Fry the Salsiccia or Italian Sausage until browned.
Slice the Cherry Tomatoes and caramelize them in a pan with a bit of sugar.
Slice the Eggplant and fry it in olive oil until golden brown.
Assemble the dish by placing the cooked Orecchiette in a serving bowl, and topping it with the caramelized Tomatoes, fried Eggplant, crumbled Burrata, and grated Parmesan.
Add a few ladles of the pasta cooking water to create a creamy sauce.
Season with salt to taste.
