In a medium bowl, add the almond flour, oat flour, cinnamon, baking soda, and salt and stir to blend. Set aside.
In a large bowl, add the butter, honey, egg, orange zest, and vanilla. With an electric mixer, mix until smooth, 2 to 3 minutes.
Add half of the dry ingredients into the butter mixture and mix on low speed until just incorporated. Add the remaining dry ingredients and mix until well combined and smooth. Dough will be thick - do not over mix. Fold in chocolate chips.
Cover the bowl with plastic wrap or a large plate and put in the refrigerator for at least 10 minutes to chill.
Turn the dough out of the bowl onto a countertop or work surface. Using your hands, shape it into a log about 3 inches in diameter. Wrap it in parchment paper and put it in the freezer for at least 10 minutes to chill.
When ready to bake, preheat the oven to 350°F.
Cut the log into 1½-inch-thick slices and place on a baking sheet lined with parchment. Bake for 12 minutes, until golden brown. Remove from the oven and let cool slightly on cooling rack before eating.
