Mix to a smooth dough, press into a 26 cm (10 in) springform pan, and prick the base with a fork.
Pre-bake at 180 °C / 355 °F for 10 minutes, then let slightly cool before adding the filling.
Pour the filling onto the pre-baked crust and bake at 170 °C / 340 °F for 60–70 minutes.
Let cool completely before slicing — it's even better the next day.
