In a large bowl, combine ground chicken, minced mixture, tomato paste, chopped jalapeño, sumac, Aleppo pepper, cumin, smoked paprika, turmeric, salt, pepper, and olive oil
Mix gently until evenly combined without overworking
Spread mixture on a sheet pan and smooth edges with a knife or spatula
Cut long vertical lines through the chicken to create individual kabobs with space between them
Bake for 18-22 minutes, then broil on top rack for 3 minutes
For the sauce: mix Greek yogurt, lemon juice, grated garlic, fresh dill, and salt until smooth and creamy
For the salad: combine diced cucumber, chopped tomato, sliced red onion, parsley or dill, lemon juice, sumac, salt, and pepper
Assemble wraps with bread, sauce, lettuce, 2 chicken skewers, salad, sumac, and fresh
