Crack an egg into a bowl and add 2 tbls of mayo, salt and pepper.
Mix well until you see it thicken and begin to emulsify.
Brush a ramekin with some olive oil and pour the egg mixture into it.
Microwave for 50 seconds.
Remove and invert onto a plate.
Sprinkle a little flaky salt, drizzle a bit of chili oil and top with chives.
